    You're very welcome. It's amazing that soaking the beans works so well. Coincidentally, we had it last night and I'm just a-settin' hyar, fume free.

    2 things about vegetarians.
    1. Don't be too hard on them folks. At the very least, the minor theme of vegetarianism in America sparked a general creativity in preparing vegetables that has saved many of us from those limp, canned green beans as a "side dish." My mom's cooking improved dramatically when my older sister became a vegetarian and she (Mom) made the adjustment to keep her (sister) coming home from college.

    2. I saw this on a bumper sticker once: "If God doesn't want us to eat animals, then why are they made of meat?"

    I see what you mean, bungdiri. I've spent stints of time with Seventh Day Adventists (the devout are strict vegetarians), and honestly like the occassional Morningstar Farms product.

    At the same time, simply put, I like meat.

    I agree with you. It is stupid to make it so hot that it is hard to eat. Make it hot but make it taste good first.

    A Good Chile Recipe

    Modified, original from The Chile Cookbook

    8 dried red chiles, New Mexico hot is good
    8 dried Ancho chiles
    remove the seeds and submerge in a bowl of hot water for 15 minutes
    then puree the whole mix in a blender, this is the base sauce

    saute a large onion and 3 large cloves of garlic in butter and/or olive oil for 15 minutes, cook it well.

    Brown 2 lb of ground beef and 1 lb of ground pork. Chunks will do ok but I like ground

    combine it all in a large pot, add 2 cans of beef broth and 2 tablespoons of cumin and a tablespoon of oregano. add 2 cups of water and let it simmer a couple of hours. Add salt to your liking.

    The cumin makes it good and spicy. You may want to try 1 tablespoon before adding the second. The oregano adds a nice touch, it goes very well in chile.

    I've got nothing against vegetarians. But like honeychile said, I likes me some meat.

    I don't have a problem with people who don't happen to like meat. I DO have a problem with people shouting from the roof tops to stop killing animals, and that farmers are cruel. I used to manage a dairy farm and I've worked on ranches from Texas to Montana.

    The stop killing animals brigade are full of manure.

    Indeed, I wonder if they know how vegetables make it to their local grocery store. Building roads destroy animal habitats, you know.

    No first born or seconfd born children required. I do hafve to wait til the wife makes it home at a decent hour from work, and can still focus enough to tell me what it is.

    All I know is that it involves a crock pot beans, beef, and lots of hot peppers.

    1. Always toast your cumin before adding into a dish. It will gratly add to the flavor.

    2. Anyone else want a food and drink section?

    --Neither. I'm from Eastern NC, we use a vinegar and pepper sauce. When I went to college in the western part of the state they used the tomato and vinegar sauce. Only the dirty heathens of SC used mustard sauce.

    Great thread!!!!! Thanks for resurrecting it!!!!

    Appreciate the red beans and rice and basic rub recipes. Will use those a lot this summer.

    This weekend, tried my hand at making venison goulash using the tripod pot cooking method used here. Lot of fun and was not too difficult.....had a ball drinking wine by the big ass fire. Will try and post the recipe.

    Really appreciate this thread..Love to grill and have been looking for something that would help recreate some of these excellent meals here in Hungary. Keep it coming
