Never tried the snails. But i would love to try them. I would try almost anything. I have tried horse meat and i liked it. Bats not even once!!!!
looks a bit dry and overcooked. If I were selling solely colombian food here in the states I would def use a lot of the same Colombian elements, rice, beans, sofrito, seasonings but incorporate better cooking techniques, better sides and improve the quality of the ingredients. Use a much more "farm to table " profile. Most Colombian places I've gone to (NY, CT, NJ, FL), use tons of MSG and dumb down the food or add cheap elements like shredded mozzarella. Lots if not most empanadas in restaurants are not even made fresh and premade at a wholesale facilty.

there is another restuarant that earned a michelin star recently: EL CIELO i only have been in LEO, is a little overrated...bit maybe if you are not familiar with caribean colombian food will be a very nice approach
I am going to have a breaded Chuleta the size of my head today & patacones at one of the only Colombian places in the Chicago Suburbs. Also going to try a tamal tolimense which people say is kinda weird but hey, I am open to it.

haha, this is great. Colombians really do eat as if it was their last meal. Sometimes I'll see some thin gal at a Colombian restaurant having the Chocolate as the starting app and then tostones and then soup and some other plate with rice with some huge serving of protein. I'm like where does it all go! I went to a chinese restaurant recently in NJ with some asian buddies. Had to try everything because they were hosting but eating tripe again took some guts (pun intended).
Still love coconut rice. Is the deep fried arepa with the the egg inside a costeno thing ? delicious!
yeah is costeño thing hahaha and the caribañola..that is a empanada of yuca with cheese. exelente but not healthy snack
Not a Yuca fan but i've never had it with cheese in an empanada....gotta try that. There is little to no variety here in the states with Colombian food. They are ALL pretty much the same "Paisa" diner menu. I would love to see some place that has a bit more native style dishes.
The carimañola is excellent, try it (just don't expect an empanada, they are different). There are also carimañolas with cheese and meat which are great. I agree that Colombian cousine is far too great to be limited to Bandeja Paisa (which I love with all my heart).. but you can go to any region in Colombia and find amazing dishes. My mother had a full book just with Cartagena's dishes, and it wasn't slim either, it looked like my calculus book in college. If I had to put a Colombian Restaurant I would have dishes like: Ajiaco , Mondongo, Arroz Atollao , Lechona , Tamal (one for every region) , Posta Cartagenera , Fried Pargo , Mote de Queso y Ñame , Cazuela de Mariscos , Carne a la LLanera, Sudao (pollo/carne/lengua), Coctel de Camarones , ........ With snack/treats like Empanadas, Carimañolas, Solteritas , aborrajao , Marranitas , Cholao, Lulada, Patacón, Arepa e' Huevo, Obleas , fresas con crema ,Buñuelos , Smoked Chicharron, Chorizos , Morcillas and so forth. We trully have an amazing cousine just to limit to a couple of dishes.
Let's have some fun and find some parallels in our Colombian Cuisine....when you're craving our stuff but can't find it, what's next? I think I have to go Peruvian?
