I don't have extremely discerning taste when it comes to rap, but I really like the Beasties' "Sure Shot." My husband has very passionate opinions on all things musical; however, he does not have a BigSoccer account. So, here's his list...

The Message - Grand Master Flash
    Apache - Sugar Hill Gang
Fear of a Black Planet - Public Enemy
Television, the Drug of the Nation - Disposable Heroes of Hiphoprisy

Despite not being a rap specialist, I'd have a hard time giving my favourite rap songs.

So, as I can remind them : most of the snoop dog / Dr Dre stuff I've already read in this thread.

'Mo Money, mo problems' is pleasant.

Er, technically, it was 'G-Funk', but I have good memories of 'Regulate' by Warren G.

I have scores of french rap links to add but I'll do it later, hopefully...

I gotta second that one. I can't believe I left Gang Starr off my list. They're consistently good.

Also, a song I've been liking lately is "Indier Than Thou" by MC FrontALot

    At the moment:

Ying Yang Twins ft. Pitbull-Shake (I know I know, but its catchy as hell)
Common-Everything on Be (Although I don't consider him rap, he is 'Hip-Hop' :D)
    Kanye West-Gold Digger

Come to think of it I like Hip Hop better than rap, which I define as stuff like 50 cent, Lil Jon :), Tupac, Juvenile, Young Jeezy, etc.
