    He's talking about not cooking at a tailgate; it's not like we're going to put him in a kayak, set him on fire and push him into the river. He'll still be there.

    Yeah. We'll definitely use a scull, not a kayak.

    Hey...think we could get the okay from the city to hold a Viking ship burial outside the stadium before our first home game, complete with burning effigies of DC's players? Now that's a tailgate!

    Stop it, all of you.

    I'm not going anywhere, and it's gonna take a bunch more than alcoholism and unemployment to keep me away from Union Field. All I meant was a sliver of optimism. Once we hit our stride next year, the tailgates are pretty much gonna run themselves. Not to mention the influx of newbies we are going to see after we move into our cozy new digs near the casino. I'm willing to lay odds that there are going to be enough interested people who want to help out that many of us will simply be able to hang out and have fun. I enjoyed the GCQF tailgate immensly, and what made it that much more special was all of you loony psychopaths I had the esteemed privelage of working with. I simply believe there will come a time when we can all stand on the other side of the lines, and enjoy ourselves together. Granted, that will be all of 10 minutes since we are all insufferable know it alls who will be compelled to jump back over because these noobs simply "aren't doing it right."

    We are all going to party together for years to come. Who knows, there might even be a day when I will let one of you buy me a drink at a tailgate! Until that day, however, I will be there every week. My biggest wish is that I could find a way to turn this into a way to support my family and make a living out of this. Perhaps we all should start working on the official SoB Tailgate cookbook. We can take some of the recipies we use thru the first year and pair them with pictures from the SoB infancy all the way to our ownership group letting us all use the MLS Cup as a gigantic beer mug at the tailgate when our players get their rings. Considering the Union should have already retired the number 12, for us, before they even have a uniform or players to inhabit them, I don't think it's too much to ask!

    no, we are using a flaming hoouk in the drunk-a-pult to ignite it.

    that's what my whole point earlier was.
    now get back in the kitchen and figure out how to get 300lbs of prime for pennies and a slicer so we can have cheese steaks at the friggin tailgate!

    Steve's prince of steaks in the northeast embarasses all other cheesesteak places......tony lukes is a joke and geno's and pat's gimme a break (you might as well wear a fanny pack and a camera around your neck if you go there, you're tourist!!!!!)

    I don't know about pennies, but if you're serious about this, there are a couple of economical ways to do it. First, don't use hoagie rolls, give them "club rolls"

    They are only 6" long, and can't be as overstuffed as hoagie rolls are. Drop yer cheese inside before you add the beef, and viola!

    Second, go for "no roll" beef. While using a USDA Choice ribeye would be nice, it costs far more to get beef that has been thru the grading process. {FOOD LESSON} When a rancher brings a herd of cattle to slaughter, they have certain grading quotas to go thru; so many Prime, Choice, Select, etc. Once those quotas are hit, they send the graders home so they can stop paying them. Any beef that hasn't been graded is called No Roll, it has been USDA inspected for food safety, but not quality graded. As such, it is far cheaper. One can also mix in thin sliced beef cuts that aren't Ribeye, as long as it doesn't go over a 1:1 ratio. As we get going, I'm sure we are going to establish a relationship with a real kitchen to do our prep work, either a catering company, banquet facility, or church kitchen to get our dirty work done. Shaving Cheesesteak meat isn't the hard part. Finding a decent griddle that can stand up to the volume and abuse is, especially when it needs to be portable. I'm sure that we could fabricate a griddletop to go over one of the big grills. Rumor has it we might be investing in a second "bad boy" to go along with the one we already have. If we cook the onions ahead of time, and make sure the beef is cut fine and ready to go, it wouldn't be that hard. I'm starting to think that we are going to need a brand new tailgating thread simply do brainstorm about logistics and potential serving issues. I'm not sure who has the biggest oven, but we're going to have pulled pork at one of these, and those things need to slow bake for 8 hours assuming I don't hit Powerball today and buy that portable BBQ trailer!

    This might be for that other thread, but a tailgate question for the Chef...

    Is there any realistic way we'd be able to set up a large enough outdoor fryer to cook at a tailgate? Is it practical to use a grill-fired fryer to hit (and stay in) the right temperature range?

    Too many years as a San Jose Clash fan mean it's not a soccer game to me unless there are churros. Mmm...churros...

    i'm gathering the materials I need for the smoker.

    which reminds me..if anyone has access to scrap steel that i can have for extremely cheap please let me know. i figure the longest length i will need is about 3 ft.


    in other news. what i see happening for other sports tailgates is the night before a select few get together to do all the prep (thin sliced beef might be hard to pull off at one of these, but the butcher might be able to do it anyways) and party a bit. i might be able to convince my downstairs neighbor to loow us to use his kitchen from time to time, but it would prob be easier if we had someone already bringing a trailer with some of our stuff on it, or at least a decent sized SUV leaving from the prep area for the game. *coughdribbscough*

    you might agree with me on this part...have a set menu, or at least have one person set the menu so the prep team knows what needs to be done. that way we don't have 37 different dishes that don't add up to enough food for everyone.

    and yes, we do need to re-open the tailgating thread.

    Right on nhlman10. Last time I visited my sister in Bucks, we ate dinner at the one near the Oxford Valley Mall. It was great. Not chopped. Man, I am hungry now.

    And yes, I would be interested in the official (or unofficial) SoB Tailgate Cookbook. We need new recipes out west.

    Dude, we just had a huge spread of baked ziti, antipasto salad, and breadsticks from Season's Pizza for our Monday staff meeting. I'm still full.

    damn all this talk of cheesesteaks make me want to go back to philly for another one!

    i went to philly last march. didnt bother with any of the choices of the poll, since i could only walk around UPenn and downtown. i had two, both which were excellent. one off of a guy in a taco-truck style north of UPenn, and one between downtown and chinatown underneath a freeway. i cannot for the life of me remember their names but DAMN THEY WERE GOOD.
