Combine all ingredients except beans and pasta in a large pot. Bring to a boil, then reduce heat and simmer covered for 30 minutes. 2. Add beans and simmer an additional 30 minutes. 3. Just before serving, prepare pasta according to package instructions. Drain and add to pot. Serve hot in bowls.

A frequent Lenten Friday meal, Grilled Fish Tacos on Corn tortillas with a side of Guacamole washed down with coffee at a local Mexican restaurant. The tacos have grilled fish, topped with a cabbage based pico de gallo, and a sweet chipotle salsa. Absolutely delicious. Of course, they are served with the obligatory rice and beans. The coffee has a hint of cinnamon in it. The only improvement would be ot have a wedge or two of lime to squeeze some lime juice on the tacos.
“Gringo Tacos” Take a flour tortilla, put some white cheese on it, microwave it for 30-45 seconds. Done.
