Sushi Tuna belly, when available. It is to regular tuna as regular tuna is to everything else. Flying Fish Roe Cooked Fish broiled skate plank broiled salmon (like they do it in the Pacific Northwest) In general with cooked fish, I find it's more a matter of the preperation and presentation. So if forced, I would talk about specific dishes. The bracketed formatting should use just 'b', not 'bold'.
Tamago is one of your favorites? I love shiso - so any sushi involving it -- tuna, avocado and shiso rolls are one of my favorites.

Sashimi: toro (fatty tuna) Non-sashimi sushi: kappa maki (cucumber roll) Non-sushi seafood: whole unagi (freshwater eel) served on top of rice. Using it on sushi doesn't do it justice. Non-Japanese seafood: grilled mahi mahi or medium-rare grilled tuna
I have yet to find a sushi or sashimi that I really like--and it's everywhere here in Hawaii. As far as cooked fish goes you can't beat catfish fried in beer batter.
uni/sea urchin w/ quaile's egg. funny thing is, for the longest time i didn't know that it is supposed to be an aphrodesiac/performance enhancer for guys- now my girlfriend and i know why the chef at the sushi place around the corner always like to tease me about what we're gong to be doing after dinner. and toro/fatty tuna is extremely good, too.
