Keep Your Hands off Eizouken A really cool story about three girls coming together to make an anime (Well, two girls. The one in the middle is trying to profit off of them). The art in this show is absolutely beautiful when it gets going. Just a journey through the imagination of a couple of people who just want to make good art.
I'll also add that I recently watched all of Carole & Tuesday, a music-based anime created by the same guy who made Cowboy Bebop. The plot is fairly predictable, but the music in the show is absolutely fantastic. The absolute best soundtrack I've heard in anime. Then there's this beauty of a composition:
