    In Hong Kong, I ate deep-fried whole pigeon (very gamy, all dark meat, and you're supposed to eat the crunchy head) and snails out of the shell -- not escargot, but something that tasted like a pencil eraser.

    What exactly is haggis?

    When I was in Scotland, I saw all these Haggis dolls and "myths" about the Haggis creature, but I didn't hear one proper explanation of what it really is.

    In parts of Morocco (Fes and Marrakech, I believe), they do a sort of pie that is best described as a big baklava - layers of filo-like pastry, with a sweetish syrup (I think) and meat in between the layers; from what I was told, the lesser version is made with chicken, the better version with pigeon. We were served the better version.

    Bisteeya. Delicious stuff. Almond sugar is sometimes used in the place of the sweet syrup.

    Had a dessert tonight from Madagascar of caramelized pineapple with green peppercorns (?!), which was set on fire with a generous splosh of rum, a la cherries jubilee. A little scary when the flames shoot 4 feet in the air, albeit dee-lish.

    Stuffed sheep's stomach. What it's filled with seems to be somewhat random -- lamb's liver / heart / lungs is traditional, but I think it's like a pie in that you can put anything in it and call it haggis.

    At certain places in Colombia they have rice, beans and meat for breakfast.

    If you go to the Amazon and get to do the trip that allows you to stay with certain tribes, they'll make you eat monkey brains (the monkey will still be alive). It's not very polite to say "No, thanks."

    Dinaguan(Philippines) fried piggs blood (AKA chocolate meat)


    Balut(Philippines) it's an egg that is almost a chick, with a developed beak, and a few feathers, you drink beers and suck'em down, supposedly it gives you super natural powers!
