it is actually pretty easy. You need, more or less, the following - I never eat a lot of it, but always add it/mix it with salad.

    About 1 cup of vinegar
    maybe 1/3 cup olive oil
1 tsp or maybe 3/4 tsp of salt
    1 onion
    2 tomatoes
    1/2 green peper

It is kind of up to you... make sure that the onions, tomatoes and peppers are very finely chopped (not 'thin' chopped, just bits). Then you really just mix in a bowl, you can taste for seasoning. You can add parsely as well. The taste is always a little bitter (to me at least). Add more or less ingredients if you want. I always have it cold but room temperature is good too.

Cilantro can also be substituted for parsley.

Maybe I'll see if my wife can make some today.
