Anybody have a recommendation on a good vegetarian or vegan cookbook? Please resist the temptation to make a "there's no such thing" jokes.

Anthony Bourdain recommends this one, and he hates vegertarianism/veganism edit: but that book is even more extreme, nothing is cooked i believe.
K nailed most of my favorites. That Vegan with a Vengance book is phenomenal. Lot's of really easy stuff sandwhich wise. Great brekfast and baking stuff as well. And Pizzas. One I haven't seen mentioned, that takes a lot more work on most meals is The Voluptious Vegan It's cool cause it has it all set out into full meals with salad side dish, desert, etc. A damn good morroccan stew is in there somewhere. It should also be noted that every issue of Vegetarian Living Magazine has at least 5-6 really good vegan recipes.
This is a great cookbook. Imagine actually purchasing your ingredients locally, not having to cook anything, and you can get rid of your frig because you don't need to store your dairy or meats... you can buy those small dorm ones for your beer. Although not a strictly vegan book, this would be a great addition for anyone wanting good meals that fill you up. The tough part about switching to a vegan diet is that many meals don't make you full, but the flavors of Thai food are so intense that it often does.
That looks really awesome. Somehow, this has turned into the vegan book thread. I'm interested in some of those, but am truly most interested in vegetarian cookbooks.
Sorry... didn't mean to contribute to that. Something that I have regularly is heirloom tomato salads. I wonder if you'd like those tomatoe and mozzarella antipasta dishes that are famous in trattorias.
Challenging: Less challenging but excellent: There's at least one followup book to the Horn of the Moon which is equally good.
I got this one as a gift but I recently gave away (I never made anything from it and it's a HUGE book). If you are a foodie or REALLY like to cook it's probably a good bet but I like stuff with few ingredients and don't take a lot of time. K
I personally favor asian vegetarian food, so I'd recommend the "Asian Vegetarian Cooking" written by Camsong and Luffe. It's a small book, but all the recipes I tried so far are excellent.
I know I started the thread, but this one looks awesome. I think it's going to be one of the first ones I order: The description and reviews say there are no substitues or omissions from recipes that they only included things that were already vegan.
