    The tortilla crusted tilapia I had for lunch made me wish we had a seafood thread. So we do.

    Scallops in butter sauce.

    Cajun blackened fish.

    Did you know you can cook a filet in the microwave?It's great as long as you make sure there's sufficient liquid for it not to overcook.

    Calamari..Mmmmm.

    Clams (steamed of course).

    My-soon-to-be-ex hated fish.I don't know why I stayed with her for so long.

    How about this...

    BBQ salmon, after it's been prepared in a garlic-lemon pepper marinade?

    That's one of my personal favorites for pre-game BBQ tailgating.

    Yummy.... :p

    My favorite way to cook fish (or really any kind of flesh) these days is to bake it en papillote on a bed of veggies with some salt and pepper, julienned fennel, and grated ginger to season. It's quick, and everything comes out amazingly tender.

    Hmm. My friend insists the only way to grill shrimp properly is to grill them with the heads still on. there's very few places that sell them that way. The one time I grilled shrimp (de-headed) they came out way too dry, but I must believe its not so much the heads being on or off is important as much as that some kind of is liquid involved in the cooking. Do you soak them in water, marinate them, or what?

    yea, to grill them they have to be in some sort of marinate to keep them moist.

    i usually marinate them in a terriyaki sauce, as i did last night...although i have heard they are pretty good if you cook them and sprinkle them lemon juice throughout the process too keep them moist.

    Chargrilled redsnapper, mahi mahi, or yellowfin tuna.

    Scallops, shrimp, and crab (any kind).

    Seriously. This was truly yummy! I'm very much a salmon girl.

    I also like seared Ahi though. That's my favorite.

    Easy, girl! I'm a married man now! :eek:

    That 2001 season where I was supplementing my game reporting experience with cooking at the tailgates beforehand, that was the most fun I've ever had in all my years of attending games at Spartan.

    Of course, having worked concurrently for a leading caterer in the San Jose area certainly didn't hurt, either.

    My in-laws were very impressed, too. Did the same recipe for Christmas that year, and I even had some of my wife's relatives come up to me and say, "You know, I'm rather full with this massive feast right now, but that salmon smells irresistable. I have to save some room for that."

    And they were not disappointed.

    I'm having a craving for it this week, in fact. I might have to get some salmon steaks at Cole's or Safeway, while they're still cheap...

    And we plan on cooking that, as well as chicken and ribs, at any of the Aussie Rules venues this year as well... might as well bring an American tradition of tailgating over here.

    I just made cajun blackened albacore tuna fillets for dinner! They were so nummies!
