I would certainly love to know too... with the caveat that I am in the US. I was able to watch a Jong AJAX game in it's entirety once... the link was posted on this forum and I greedily took it in. I have been jonsing for more ever since.
I'm not sure he is watching the games. Those all look like stats you could pull from a game report. Goals, cards, etc.
It's pretty rare that I get to watch complete games of any kind these days. Happily I have a job that does not keep me fully occupied, so I can follow along, via a match tracker of one sort or another. Sometimes a team's twitter - even a Jong team - will post goals as they happen, but often highlights are only available post-game.

Ledezma picked up a first half assist according to Soccerway. Production is starting to pick up from the drought the first half of the season.
The first half of the season where he played a pretty efficient game outside the final 3rd makes up for it. At least do one or the other, a game or season.
Well first time i have seen him play, but his movement off ball... Was aweful. Maybe hes scared with lt. Dan in hurricanes?
ASSIST. Wasn't doing much before half, but then uncorked a beauty of a thru ball into space to an attacker who calmly finished (reminiscent of the ball he played against France in the u20 WC). Great vision/anticipation. Not present as an option initially. Seems like the opposite player he was the first half of the season where he'd be playing pretty well but missed killer passes and shots. If he can put those aspects together, he's going to be nice in the not so distant future.
What's that? It's not his assist. They are playing Eindhoven, not Excelsior. Also are wearing green. It was a lead pass centrally in behind the d, not short cross.
Also another minor piece of evidence, which is that they are girls, upon closer inspection. Would have been obvious but it's at a distance and just glanced to see it clearly wasn't what I was watching.

got red carded for what looked like a kickout after he was frustrated w/ the opponent fouling him multiple times and the ref not calling it

Yeah i didnt see that game, but in the graaf game it was quite clear he wasnt getting along with his teammates.
