I've read Efrain Valdez, Jorge Hernandez and of course Giovani's younger brother Johnathan.

What other Mexican's do they have in their youth system?

Here's the latest on Efraín Juárez:

It looks like he might end up signing for a Segunda Division club in Spain, it could be a team from Canarias, which leaves you with three options, Tenerife, Las Palmas and recently promoted Vecindario.

Meanwhile the last rumor about Jorge Hernandez had him signing also in Segunda Division, but with a team from Murcia, either Ciudad de Murcia or Murcia.

sounds good. as long as they play and show off what they're made off, some 1st division team might pick them up later on.
