The line at the Short North location typically moves fairly quickly. They're prepared and know what they're doing. As a former Northstar employee, the lines do move quickly. The last few years, I've gone in the 5:00 hour and only waited 5-10 minutes. They absolutely staff appropriately - the only backlog is for tables, the kitchen is cranking out the food like a well-oiled machine. It's less widely known, but Brassica also gives away free falafel on Earth Day.
