But there is something else I'm known for - keeping you all comfortable in times of epidemic. Whether it's saving the world from bad songs, determining what cupboard items you can use as tea, dismissing the effects of solitude on the psyche, finding out which past-date food items are safe, or wiping your ass, when viruses are about I have you covered. And now this this era of bird-flu induced 40 dollar eggs, I am back to give you... spejic's guide to making cookies without eggs. This is not in the food thread because you don't want to eat the food I'm cooking. This is just science. Anyway, there are three basic models to follow to make cookies without eggs. Left to right they are fibery vegetables, yogurt, and fibery fruits. The first uses canned pumpkin to add moisture and the fiber to hold everything together and add chewiness. As a bonus, I got to use the 5 year old can from the back of my pantry that was just a little rusty. spejic's eggless pumpkin cookies (twice the size of the other batches because it uses a whole can of pumpkin) 1 cup sugar 2 sticks butter 1 can pumpkin 2 tsp vanilla 4 cups whole wheat flour 2 tsp soda 2 tsp pumpkin pie spices 375° ~15 minutes This came out rather nice - light and fluffy and smooth. Not a strong taste at first but it builds up. No botulism detected. The second uses yogurt. I only have greek yogurt so I had to add a little milk to the resulting dust to make a dough. spejic's eggless coconut cookies 1/2 cup sugar 1 stick butter 1/2 cup yogurt (regular!) 2 tsp vanilla 1 cup whole wheat flour 2/3 cup coconut flour 1/2 tsp baking soda 1/2 tsp salt 1/4 package shredded coconut 375° ~12 minutes These are a little weird. The yogurt taste is very strong at first, even though I used a very neutral tasting yogurt. Then it kind of bounces back and forth between that and the coconut, and I can't say the two flavors go well together. In fact, I can pretty clearly say the opposite. But it holds together well, and is nice and moist inside. Maybe some other flavor cookie would have worked. The third uses date paste, which you can find in Middle Eastern markets. spejic's eggless peanut butter cookies 1/2 cup sugar 1 stick butter 7 ounces date paste 7 ounces peanut butter 2 tsp vanilla 1 2/3 cup whole wheat flour 1/2 tsp baking powder 1/2 tsp salt 375° ? minutes I think you need to heat up the dates a bit to soften them because this was a bastard to mix together. It is impossible to tell when they are done because they are always dark and they are soft and mushy until after the bottom is burned. I'd just scrape off the black parts, except the cookies crumble to bits at the slightest touch or even a stern word. The dates have a strong taste, but it works amazingly well with the peanut butter. If someone can figure out how to cook these these would be delicious. So, what did I lean today? I leaned that store bought cookies are the same price as before, so just put the burden of expensive eggs on them. Screw you Pillsbury, I got my cookie dough in a tube for $3.49 on sale this week.
The flavor changed a day later. Now the pumpkin ones are better and the coconut ones are a lot better. Eating cookies fresh out of the oven is a lie.
I can only find fault with your 1st batch. It has pumpkin in it! Having said that, I have a similar rusty can of pumpkin you can have. I wrote the contents with a sharpie just before the label disintegrated.

The big question is how long does the contagious stage last before symptoms start? If it is relatively long, then it could be very problematic. Otherwise, as pandemics go it might kill its victims too fast, so it wouldn't become a widespread problem (much like how ebola doesn't erupt into pandemics).
I worked once with a guy from CDC who was mentoring me as a budding epidemiologist. He knew that everyone had a casual understanding of ebola and wanted to describe that very phenomenon: a disease that kills to quick to really become a pandemic.
