The espn highlights in that article why the penalty was considered an incorrect call. It's not because the ball came off his body, rather than because the handball was caused by a natural body movement. Saying anything off the body isn't a penalty as a broad statement would have guys slapping balls off a chest stop left and right, let's be serious.
what made it even worse is that it doesn't even hit his hand, it's his tucked elbow I agree that there should be wiggle room for referees to potentially call handball if the arm is in an absurd position. like you said, players could take advantage of it going the other way
