    Not fair to handcuff me like that but here goes.

    2 C flour, 2 Tbl sugar, 4 t baking powder, 1 t salt. Sift toget then add: 2 eggs, 1 1/2 cup milk, 8 T (1 stick) melted butter.

    It's that simple and you can play around. Beiler's in Uniontown has cheap flours so buy some but use the above recipe as your guide.

    Example: 1 1/2 C flour, 1/2 cup oat flour and 1/2 cup chocolate chips.

    1 1/2 C flour, 1/2 C buckwheat flour and 1 pint blueberries.

    6 T butter, juice of 1/2 lime and 1/2 cup chopped pistachios.

    Does the flour need to be a special flour?

    I have those ingredients in my house. I have used various types of flours when baking recipes have called for them. Do you have any types that you prefer?

    Also, @Minnman you will need to start sharing your meal recipes.

    Nope but since you live that way I'll mention Beiler's again right off 619 and Cleveland. Their flours are great for baked goods.

    What I'm in the mood for is what I prefer and the recipe is a guide. I use 2 C flour when I make them and the type of flour will vary but the quantity does not. It may be 2 C regular flour or 1-1/2 C all purpose and 1/2 C something else.

    Today's waffle had shredded smoked Gouda and fresh thyme leaves. Perfect partner for a ham steak. Sounds clever but in reality I was cleaning out the fridge and Gouda thyme waffle with ham steak sounds much more appealing than bunch of leftover shit I don't want to spoil. I'm sure you've figured out that name game.

    For ten years, I lived maybe a half mile from Beilers so I feel qualified to say that except for cold cuts and cheese everything else is stuff they bought in 55 gallon drums so that a bunch of overworked and underpaid Amish girls can spend their days scooping whatever it is into plastic bags.

    Which is OK because they stop sending their kids to school after the 8th grade, which is all the law requires. Time to get to work, kids, and anyway unless they're teaching dish washing and laundry handling, theres nothing there for them anyway.

    The girls are little more than slaves, the stuff they repackage is the cheapest generic crap the owners can find and could be five years old for all they know or care.

    Not my cup of tea. Which, by the way, they buy in 50 pound bales so that exhausted pre teen Amish girls chained to benches can repackage it in cheap plastic and sell it to the Engkish (that's you and I, not Harry and Meghan. Or them either, apparently) so that they can tell their friends they bought some Amish tea. Which came from Singapore in a tramp steamer 3 years ago

    I found that article one sided, sensational and, well, typical of Cosmo. My main issue is that the women are considered second class citizens, largely because they dont do anything much to make the family money, and subsistence farming doesnt really pay the bills.

    Theres a real limit to how many acres one man can farm with four horses. Sons add real value, real income. The more sons you have the more you can produce. Women cook and clean. So yes, their social status is lower. Just like it was back when everybody lived that way. No different.

    Do I believe theres sexual abuse in the communities? Well, duh. Name me a comunity where there isnt, and hasnt been since the dawn of recorded time.

    One mistake "the English" make is that they think all Amish are the same. While there are a lot of similarities, each community is different--they are organized along the lines of "house churches", where each church has its own elders or bishops--and the rules can vary a bit. Though, if they start heading down a technological path they often just become Mennonite. My sister's Amish neighbor used to ask to use the phone from time to time--and of course Amish woodworkers often use modern tools--just not at home. Interestingly the ban on electricity doesn't have as much to do with technology as it does with "being bound together with unbelievers" (which is a Biblical injunction--though really intended for marriage). There's a very interesting center in Intercourse, PA (and I expect in the Ohio Amish country) that explains a lot about the Amish in a fair and understanding manner--it's worth a visit. I used to spend holidays in Lancaster Co. when my family lived in the area.

    You're correct in that there a good deal of difference between communities. Because of the lack of modern communications - which, to be fair, they willingly choose- each community evolves very much in isolation.

    As for the phone, I've known people who lived near Amish groups and they all say the same thing, only half in jest: they say that the Amish arent opposed to having phones so much as they're opposed to paying for one. Theres a constant stream of Amish knocking on their doors asking to use the phone. Usually for stuff like doctor's appointments and government issues but it drives them crazy.

    And of course they always have a sick kid or old person who needs a ride to the doctor.

    The fact is that as sincere as they may be about avoiding a lot of modern stuff, the world doesnt really make it possible.

    Did something happen? The place was recommended to me and I find their flours better than Earth Fare or Raisin Rack.

    My main problem with their flour, aside from my native sarcasm, is that you dont know the type of wheat, the gluten content or much of anything else.

    I've known quite a few people with ties to Middlefield up in Geauga County and of course Holmes County. Amish Communities have often had exceptions to no electricity rule. Back in the '80s and '90s it was having electric fences to keep the cows in. When my mom worked for the phone company, she told me about Amish families who would have a phone installed on the telephone pole at the edge of their property ("So long as it's not in the house"). In college I dated a girl whose father was an attorney for the Amish. I'll never forget driving up to visit her and getting stuck behind an Amish buggy that had roach clips hanging from the rear view mirror and a car stereo hooked up to a car battery blasting country music. Some wealthier Amish own cars, but hire drivers since they aren't allowed to drive themselves. They make a lot of their money in manufactured goods like furniture, construction, and roofing rather than farming.

    You see a lot of Amish at Akron Children's Hospital. According to one friend, there are certain illnesses and disorders in the Amish community that require the installation of home medical equipment, which in turn allows the family to get electricity. When that happens, a TV will often find it's way into the barn.

    Of course this isn't without it's backlashes. A while ago they had a group of fundamentalist Amish men going around cutting the beards off of those men who they felt weren't living up to the ideals of the Amish community.

    A friend of mine who was also my bakery supplier told me one of the Amish stores over in Eastern Ohio had a phone booth at the end of his farm lane that he used to get around the no phone ban.

    Other cultural and economic issues aside, they do make nice furniture. Very reasonably priced for the quality.

    An amish man made the cabinets for our kitchen. I expected this to take weeks and months, picturing hand planes, hand crank drills, and pull saws. Naw...our contractor said this guy has state of the art power tools, paint-spray booth, and a CNC machine. His shop looks like the bridge of the Enterprise.

    I bid against Amish companies for most of my 20+ year career as a cabinet shop owner. What I found was that not only were they using modern equipment but they were marketing "Amish Made" when they were using mostly Hispanic labor.

    Then there was the company that was using a massive, belt driven, steam powered copy lathe that was being operated by 10-12 year old kids.
