FIFA eligibility rules to play for a national side are largely based on either birth location or filiation, which is kind of a pain for Vatican clerics.
If FIFA (if not already) mandate that every federation require to field a women’s national team, a lot of folks would lose their MF mind.
How hard did you look? Yours is post 174 on this thread - posts 162, 163 and 164 are about the Vatican City (i.e. the same page as your post). There is also a search function. Vatican City women has played 2 matches 26 May 2019 - AS Roma (Serie A, Italy) 10-0 Vatican City (match was 2 x 20 minutes) 6 June 2019 - ASD Trastevere (Serie D, Italy) 3-1 Vatican City (match was 2 x 30 minutes) A proposed match in Austria was cancelled for "non-footballing" reasons. SOURCE: Quick internet search.
I was relying on @toad455 's posts in recent years and, before making my post, went back to the first several pages where the team wasn't mentioned on your first list. I assumed someone would have dropped the name in a full list at some point if they hadn't ever played a game before the past. Also, I came asking specifically to see if the reports I found - that they hadn't played a game before the scheduled Austrian match - were true, since I couldn't find that info from Google either. And I did do the Google search before coming here. Even with your new post naming the other opponents, the only verification of those two matches that I can find is some sources saying pre-match that the Roma match would happen (a Google source with the actual score doesn't appear for me until the 4th page of search results) and a single forum post for the Trastevere result. It's not easy information to find - even your post #162 (which I admit to missing entirely since I was looking for the summary lists) makes it sound like the Vatican City team hadn't played before at all.

I'll add that a San Marino's NT doesn't seem likely at the moment: they seem to concentrate on the club level, right now, as San Marino Academy is playing in Italian Serie A Femminile (and seems quite well-positioned to avoid relegation, after being promoted in 1st Division last season).
With the qualifiers pushed until October, Sudan is set to make their debut in the Arab Women's Cup at the end of August.

Trying to get confirmation that Saudi Arabia will be playing their first match on Feb. 20. One source has said they're scheduled to play Seychelles then followed by the Maldives on Feb. 23.

Sometimes I get confused with the exact scope of this thread: we've just seen Sint Maarten play an international friendly match, but we insert them in the list of the nations who haven't played international matches. Why? It wasn't a FIFA sanctioned match, I suppose?
Or Saint Martin and Sint Maarten were confused. Understandable when both have the same name (only translated) and are on the same island.
I think Sint Maarten is not a FIFA member yet (but is a member of CONCACAF; the FIFA membership may have changed recently), so any match wouldn't be officially a FIFA match. I could be wrong about that. But, I didn't think this thread was only counting FIFA-sanctioned matches as a couple of the other federations listed are also not FIFA members.
