This is the basic recipe I use, except I skip the eggs. The consistency is a little different -- it is not as solid as commercially bought ice cream, and it melts very quickly -- the one batch I made with eggs was much more solid and resistant to melting. I also use a cup of sugar instead of 3/4 cup, and one teaspoon of vanilla extract instead of two. But it's all good. You can reduce the amount of fat by using a higher proportion of milk to cream, but then the consistency really doesn't come out right. Not creamy at all. It still tastes pretty good but I would stick with the 2 cups cream / 1 cup whole milk ratio to get the best ice cream. I heard (from watching Good Eats) that if you use all cream, it will turn into butter before it freezes into ice cream, so I guess that's not recommended. You can replace the vanilla extract with mint extract for a basic mint ice cream, e.g. mint choclolate chip, etc. The best part is, you can add whatever solid things you want in the last five minutes. Mint oreos, regular oreos, crumbled up cookie dough, chocolate chips, butterscotch chips, white chocolate chips, M&Ms, chopped up Reese's Peanut Butter Cups, chopped up chocolate bar, sliced up strawberries, blueberries, rasberries -- I've used all of these in the basic vanilla ice cream at one time or another and it's just awesome. I guess the one that I don't recommend is those little candy hearts (you know, they say "I LUV U" or whatever), I put them in a Valentine's Day batch and it wasn't a big hit, they're too chalky and don't go well with ice cream.
The eggs are put in there because it will keep in the freezer longer. If it's mostly going to be eaten in one sitting (like for a party), then it's not necessarily needed.

Last night I had some ice cream from Oberweis Dairy. It was good, definitely better than anything you get in a grocery, but it wasn't the best. Anything from JPLicks (Centre St., Jamaica Plain).. insane lines in the summer, but so worth the wait (and the drive) Any of the amazing flavors at Scones and Cones (McMurray, PA) PS Honeychile- I envy you ... used to go to the Bruester's on Valleybrook Road in McMurray all of the time....especially after a run on the Peters Woods Trail..... (sigh.. I'm missin' it) and have you been to Scones and Cones?? It's behind the Peters Twp Library.
Oberweis is awsome!! They make a speacial flavor for Marshall Fields. It's chocolate mint. It's made with Frango mints. mmmmmmm when I worked at the State Street store I would go up to 7 on heaven for lunch and get adifferent concotion everyday. The shake made with that stuff is ORGASMIC.
Brusters has the best chocolate milkshakes, but they take like 10 minutes to make it. Mountain Blackberry from Gelati Celeste is the best flavor in the universe.

This may sound odd, but I definitely recommend really good, authentic (expensive) balsamic vinegar as a topping for vanilla ice cream. It sounds disgusting, but it is quite tasty.
Hershey's makes ice cream? I saw a truck today. It sais "Hershey's Ice Cram. Real Premium. Made with Herhsey's chocolate." But I've never seen it in stores.
