Leftover Turkey?

    Alright, so lets hear it...

    What special recipes do you have for all the leftover turkey sitting in your fridge/freezer today? I was lucky enough to be given almost an entire bird worth of meat (my parents thought we needed two turkeys this year for whatever reason) and I haven’t a clue what to do with it all.

    Any good recipes out there?

    My wife made turkey gumbo last night. (I'm pretty sure this is the recipe, it came from one of Emeril's cookbooks.

    However, this recipe is mostly for the turkey carcass (which goes into the stock) and all the little bits that come off the carcass. For the leftover meat, we do the usual -- sandwiches, etc.

    Last year I cooked a turkey breast and used the carcass to make gumbo. I made sandwiches with the meat. However, I realized that without my mother's gravy, I don't especially like turkey. I ended up picking the turkey meat out of the gumbo.

    Turkey salad sandwiches.

    Dice the remaining meat into a bowl with green onions, celery, mayo, coleman's mustard, celery salt, fresh cracked pepper, pinch of salt and toasted slivered almonds. Stir into a frenzy and let sit over night. Serve on toasted french bread with shredded lettuce. Yum!

    I make a TG pancake.

    1 part diced turkey meat
    1 part stuffing
    egg

    Make a patty just like a crabcake and saute it in butter. Top with gravy. good shiznit.

    Two slices of bread, your choice. Insert turkey and consume. Very good and quick. Not trying to be a smartass either.

    Hey, I'm not complaining, either. Especially when making lunches for work every morning. My wife's, especially.

    Not to mention, if you have spreadable cranberry sauce and brie cheese, even better. Yummo!

    The classics, they never go out of fashion, no matter just how monotonous they would seem...

    I like to make turkey (or chicken) enchiladas once in a while.

    Mix together about a cup of sour cream, an 8 oz. package of cream cheese (helps to let it sit outside the fridge and soften for a while first), a can of mushroom soup, a can of chopped green chilis, and a large can of green enchilada sauce.

    Saute a chopped onion and a couple minced cloves of garlic and stir into the sauce mixture.

    I take about 1.5 pounds (more or less) of chopped cooked turkey (or chicken).

    I take tortillas, and into each I put a handful of the turkey, a bit of shredded cheese, and a bit of the sauce and roll them up and place in a rectangular pan.

    I pour and spread the extra sauce over the tortillas.

    Bake at 350 F for about 20 minutes. Then spread some more shredded cheese on top and bake a couple more minutes until the cheese on top is bubbly.
