Believe it or not, the first time I had Pho was in Salt Lake - Mid-80s. I was living in Idaho Falls at the time, and SLC was where we went to the 'big city'.
Oh, I believe it! And SLC has become even more cosmopolitan in my 20 years traveling there. My favorite restaurant story: my SLC in-laws, who are not Jewish, returned from their first/only trip to Israel, a Holy Land tour, about five years ago. I asked MIL how she liked the falafel, and her response was "what's that?" Suppressing the urge to scream, I looked online and found -- yes, one falafel restaurant in SLC, owned and operated by authentic Middle Easterners from Jordan. We had to try it right away. The in-laws agreed that they really liked this delicious new cuisine! We've even gone back again. .
I passed through Salt Lake City once, about 30 years ago, right after the bar exam, when I flew one way to St. Louis and drove back to the Bay Area with a friend who was in grad school in Berkeley. All the city's lodgings were booked for some reason, including any nearby KOAs, so we slept near the side of the road in the desert. Plus, it's the only city of any size in this country I've ever been to where there was a starkly sudden divide between the pretense of civilization and nothingness; the faint sprawl just stopped dead and then -- desert as far as the eye can see. I've never had a desire to go back, and Rio Tinto does not seem to be a sufficient draw. But, hey, if it's cosmopolitan now? What's the worst that can happen, I sleep in the desert?
