I love fried plantains. Sometimes I use or mix sweet potatoes with the reg ones. I also bake my own pork & beans "Boston" style using my mommy's recipe.
The top one looks yummy but the bottom one looks suspect. Mamma mia never wrote down her recipes so that's a bummer. The closest I can come to her sauce is "Tony Danza's Sunday Sauce". I made a double batch a while back and it was outstanding.
The plantains with Bocadillo (Guava paste) and Queso are a staple of Colombian recipes and one of my childhood cherished memories. And they're relatively easy to make, just, peel, cut and bake... The plantain lasagna is to die for, but it is really cumbersome to make, so I'd say I've only eaten it a handful of times, usually at a restaurant.
