What type of drills and training do you guys have with one to two people? Any ideas would be really appreciated.

you mean 1-2 plus yourself? (for a total of 2-3?)

games:
1v1.
1v2.
man-in-the-middle.
penalty kicks.
juggling.

practice/training:
passing/trapping. stand 5 yards apart.
1. crisp passes on the ground. try one-touch. try two-touch.
2. lob the ball to each other for headers. try to get power and accuracy. 3. lob the ball to chest, trap and volley back to the server before the ball hits the ground. try to keep the ball controlled (during both trapping and returning).
4. lob the ball to thighs/knees, trap and volley back before the ball hits the ground. try to keep the ball controlled (during both trapping and returning).
5. lob the ball to feet, volley back to server.

no total of 1 to 2. But I can still do most of this, thanks.

Whenever I have the chance to practice with just one other person, I like to practice bringing down airborne passes and difficult to control balls.

Otherwise it's a great chance to practice crossing and receiving/dealing with crosses.

I have to get going but I have quite a few drills I will post to show you the types of things I have done so far and hopefully you can help with some more input. I am training one of my friends who is on the fringe for a college division 1 team.

Here is the next session I am doing with him:

1)
Static Stretches
2)
Dynamic warm-up-
1) Internal Rotation (Crossovers) -
2) External Rotation-
3) Sprinter’s Drill-
4) Sprinter’s Drill 2-
5) Sprinter’s Drill 3-
6) Sprint form running-
7) Outward hip rotation-
8) Straight leg kick-
9) Straight line hip flexor-
10) Upper body flex-

Dribbling and Passing- He will be in a grid and dribble around, I will stand in the middle of the grid. When I call out “1!” he will dribble with explosiveness for about 5 yards, when I call out “2!” he will juggle and get in 5 touches with any part of his body before he continues dribbling, when I call out “3!” he will do any move he chooses, when I call out “4!” he will pass to me, move to another spot, create a wall pass, etc. whatever he chooses.

Basic Fast Feet Training- Running in place, take as many steps as you can in 30 seconds. Progression: In and out as many steps as he can get in 30 seconds. Progression: Back and forth but not out far as many time as he can in 30 seconds. Progression: Forward and backward as many times as he can in 30 seconds.

Dribbling, Passing and Shooting- He will dribble around inside the grid, within the grid there will be several gates that he dribbles through, after every three gates he goes through he will pass to me and receive a pass back. When I say “shoot” he will get the ball under control and strike on goal. –I will give him a new ball and retrieve the last one so he can continue.
6)
A) Pick up game- He will have a cone in front of him, and balancing on one leg must bend down and pick the cone up and drop it back down. Do about –Do 3 sets with each foot. –Keep head and chest up and straight, look straight ahead.
B) 5 yard sprints- look for explosion from the start and quick first few steps, jog back. 5 reps.

Dribbling and Shielding- He will dribble around in a grid and I will have a ball in my hand, it is his job to make sure I am not able to throw the ball and hit his ball.

3 yard star- Start at Cone 1. –Cones are 3 yards apart. –Sprint forward, go back to middle, sprint to the right, back to middle, sprint to the left and back to the middle, and run backwards to original cone. –Touch each cone. –Go as fast as possible using short, quick movements. –I will use taller cones, so he can go quicker and doesn’t need to bend down all the way to touch the cones. Progression: Start in the center, run forward to the right, back to the middle, forward to the left, back to the middle, backward to the left, back to the middle, backward to the right, back to the middle.–Look for explosion of first three steps and running hard throughout. –I want three good and hard repetitions.

A) Tackling- My friend and I will both get on end lines of a grid, I put a ball in the middle, on “GO!” the two of us run out to the ball and try to get across the other persons endline, play also ends if the ball goes out of the grid. -Look for quickness to the ball and hard tackling to win the ball first.
B) Slide Tackling- I start at Cone 1 and dribble in a straight line at about 75 percent speed, he starts about 5 yards back at Cone 2, chases me down and slide tackles the ball away. –Switch sides of the field he is tackling from. -3 reps from each side. –Good timing, no studs up challenges.

Core Training and Sprints-
-20 of each, after 20 he will get up and spring to the first cone, turn and jog back. –Starting and ending cone will be 10-15 yards apart.
A) Pushups B) Body weight squads, hands on hips, squat C) Lay on stomach, push up with your stomach, basically a reverse pushup D)In a pushup position bring one arm out to the side and hold it for about 5 seconds E) Sit-ups -Look for explosion of first three steps and then sprinting hard through to the end.

He will dribble out to cone 2, turn and pass back to me, I send him back a through ball and he goes in on goal and shoots, he can either turn and shoot, dummy and shoot, or run onto the through ball. Progression: He receives a ball from me, passes it out to either flank and goes in for a cross.

Light jog to midfield and back

-End of session- Just tell him to keep hydrating and stretching.

most of these suggestions are very helpfull when you have a limited number of people. juggling is one of my favorite exercises. it drastically improves touch and reaction speed. one game we play is soccer tennis, lots of people do it and its really simple. just find a net (tennis net, volleball net, or a ditch), and its like tennis with your feet. it helps trapping, first touch and passing the ball in the air.
