how do you like them? What type of tortilla?
I personally like Enchiladas Potosinas. I like eating those with black beans and guacamole

as a kiddo in Mexico, the types of enchildadas i was use to were made with corn tortilla, ground beef or even steak. Some sort of cream and beans in the middle. more cream ontop, a salsa and white cheese (queso fresco or something similar). maybe with guacamole, yellow rice, and black beans on the side
but for some reason in the mexican cuisine, we dont use yellow cheese a lot. Thats more of an AMerican and TexMex thing. I could never understand why they would put Colby, Mozerella, America, or Cheeder cheese on an enchilada. IMO, flour tortilla, chopped beef, melted cheddar cheese, with salsa in no enchilada. With this enchiladas, you taste more of the cheese.
The corn toritlla, salsa and the cream is what makes an enchilada, not the cheese. The queso fresco (what you are suppose to put on it, gives a contrast taste to it, it doesnt take over the taste buds. with tex mex enchiladas, all you basically smell is the cheese)
The burrito and the enchilada are basically the same thing, but just marketed different. We dont even call them burritos in Mexico. When Taco Bell went to Mexico City, they had to explain to the Mexicans, what a Mexican Style Burrito is. CLASSIC

I had 8 days ago Enchiladas Rancheras con pollo that has kept my head and A$$ near the toliet. I have'nt had the energy to see a doc and I feel like $hit, no pun intended. I feel weak as hell too. I finally went to the Doc today he gave me enough pills to ensure I return to good health so I can one day enjoy Enchiladas. BTW, I prefer Enchiladas potosinas.

Enchiladas are one my favorite Mexican dishes.
Whenever I try a new Mexican restaurant I always order the Enchiladas as a way to determine if the restaurant is any good. I figure if they can't get the enchiladas right why bother trying more complex dishes.
My favorite: Cheese Enchiladas Rancheras without the guacamole on top.
In Mexico I always eat Cheese Enchiladas Zacatecanas.
The enchiladas zacatecanas feature a blend of creamy tomatillo and avocado sauce.
I hardly ever eat chicken or beef enchiladas. The only exception is when my mother whips up her famous beef enchiladas made with mucho carino pero mucho carino. I can eat about 1/2 doz. in one sitting.

That's what I'm talking about....... but where my parents are from in Zacatecas they don't use the tomatillo or avocado sauce? Where have you had those?
Those enchiladasa are made with the famous queso enchilado. It's my favorite cheese........do they use that in Aguascalientes also futbol de primera? My uncle sends me one of those cheeses twice a year.

I should have wrote that is how the enchilada sauce tasted and appeared to be a blend of. I'm not actually sure of the ingredients.
While visiting my cousins in Zacatecas they decided to take me to this one restaurant where they specialize in these enchiladas. Can't remember the name of the restaurant but I do remember it was next to a monument which has the history of Mexico engraved on to a large pole made of cantera, in I believe the Northern side of the city of Zacatecas.

I never heard of that cheese but I am going to find out. Next time I am in Ags. I would like to try it. I really enjoy eating good cheese. For the first time I brought some back from Aguascalientes this past summer and had no problems getting past customs.
