Men's water polo
Eights rowing
Road cycling
Tennis (men)
Beach volleyball (men)
Equestrian (as of this post)

That's all I can think off.

Oh yes, and football (soccer).

It would be interesting to see what they have one Medals in, they aren't that good at swimming, athletics, rowing, etc. They have really concentrated on the less important sports really heavily and just destroyed everyone in them.

ONLY really good? I think the final medal counts say otherwise. I would rather say they dominate weightlifting, gymnastics and table tennis, but there are certainly other sports they're good at.

How did it suck, do they not dominate at weightlifting, gymnastics, etc the more minor sports that less people care about.

On that argument, then, they would have to set world records in both athletics and swimming...and kick the ball and not their opponents in soccer.

But, this is the Olys. It is not just about the "big" events. It is about ALL the events.
Who cares about target shooting? The people who compete.
Who cares about the modern pentathlon? The people who compete.
Who cares about archery? The people who compete.

You seem to basing your argument on the idea that because the Chinese didn't do well at the popular sports, then they not deserving of their recognition. I say that is false. They showed that, while they cannot dominate everything, they clearly set about to learn and train for many of the disciplines and succeeded.
