Basically, I like all good food and most all meat is cooked simialry (smoked). It really comes down to the sauce. Eastern styles are based too much on vinegar for my tastes. Just not my thing. It doesn't mean I won't eat it though.
Totally agree on this point Cam. I learned years ago from a KC-based Deadhead friend of mine to always look at the ingredients for sauce and make sure that tomato was first or second and that vinegar was way down the list.
EDIT: I just remembered. I got a smoker 10 years ago, and have only ever used it for quick burgers and dogs type things, as living in an apt was never really conducive to smoking meats. This will be the first spring/summer where I'll have a yard to use. Who feels like helping me smoke up some brisket?

Not as big on the vinegar, but I do love Carolina sauces. Let's also give nods o the hat to Memphis and KC, too folks.

If you want tomato sauce, eat spaghetti :D. Destroying the taste of that pig who sacrificed his life for you is just wrong in so many ways.

Basic rules:
- soak the wood
- keep the lid closed!
- maintain temps around 200 up to 250. You can do this by adjusting the air
intake and cap on the stack. It is trial and error with an unfamiliar smoker.
- I like to use a dry rub on the brisket, but there are many ways to season
- The brisket should have a fatty side and a meat side. Place the brisket
meat side down (fat side up). That way it will self-baste.

With some of those eastern sauce, vinegar is all I taste. Oklahoma style sauces come in sweet, hot and mixed varieties. It is great because you can mix up the sauce and get it as spicy as you want!
And I am now starving thanks to all this talk!

That same KC dude gave me a rub recipe, and told me to baste with apple juice/water. Apparently, his family's won awards, and their recipe for brisket is featured in a book on tailgating by John Madden.

You guys are a bad influence!! BBQ is DEFINITELY NOT ON MY DIET. But lunch was at the only place I know of on the Hill to get NC BBQ.
Thankfully, due to the influence you guys exerted on me this morning, I am absolved of all culpability in this matter. Now, can I convince you to go to the gym to work it off for me too? :D
