A couple of questions that I had were answered in this article:
http://fifaworldcup.yahoo.com/06/en/060224/1/653w.html
The important points seem to be:
1) Only 30 referees will be chosen.
2) There is a final workshop/camp on March 21st, which will last for four days and does not sound like fun for the participants. In addition to the more traditional physical and written exams, there will also be medical and psychological tests, capped off with an ominously sounding "final interview" with the Referee Committee.
3) The Referees' Committee convenes on March 31st to select the 30 referees.
4) Assistant Referees will be selected separately, with a workshop in mid-April.
One thing left unanswered in the article is who the 111 pre-selected assistant referees are. We know that each referee has 2 ARs tied to them (for American referee Stott, they are Strickland and Barkey), but if you do the math, that means there are 23 "extra" ARs left over who are in the running. It'd be nice to know who those officials are--for example, is one of them Craig Lowry, who seems to be the odd American out right now?
