The most popular instrumental version of "Sleigh Ride" is definately the one done by Arthur Fiedler and the Boston Pops. It's played everywhere. It's kind of sedate for my tastes, since the song has a melody which you can really drive. I prefer it to be performed like a freight train.
I've never thought there really was a definative vocal version. Several are good. Someone mentioned the Andy Williams' version. I enjoy that one a great deal.
