I assume this isn't determined, yet, unlike, say the NCAA basketball tournament. So, how are the match ups for the 2nd and subsequent rounds of the knockout phase determined? That is, from the eight winners, who gets to play whom? Is it random, but with keeping same-country teams apart for as long as possible, or what? Or is it already known who would play whom?

There will be a fully random draw after the round of 16 has been played. Also teams from the same country can play each other than.

Like Forza AZ said, the 4 quarterfinal playoffs will be decided in an unrestricted draw. The semifinal playoffs are also decided on that same draw. Once they draw the quarterfinals, they put the playoffs, numbered 1-4 in a pot and draw the semifinal playoffs, like winner of qf 3 vs winner of qf 2, winner 1 vs winner 4. In both of those draws, whichever team gets drawn first plays the first leg of the playoff at home.
